
Motel Mexicola Opens Uluwatu's Most Ambitious Mexican Restaurant Yet
The Mexicola Group launches its largest Bali venue in Uluwatu this July, inspired by Mexico's Baja California peninsula. The 350-seat destination features a 21-metre bell tower, custom tilework, and coastal Mexican cuisine from culinary directors Manuel Santos and Manuel Bernal.
Bali's Mexican dining scene reaches new heights with the opening of Motel Mexicola's most expansive location to date in Uluwatu this July. Building on the success of its original Seminyak venue, The Mexicola Group has created a destination restaurant that captures the spirit and architectural heritage of Mexico's Baja California peninsula. The project represents a significant expansion for the group, which has built its reputation by designing dining spaces that function as cultural attractions in their own right.
Architect Carlos Cole of Mexico City's Sensibilidad Applicada drew inspiration from Baja's historic Spanish missions to shape the 350-seat venue. Weathered stone, sweeping archways, fountains and shrine-like structures flow throughout interconnected indoor and outdoor spaces. The property features over 65 custom tile designs, while Australian artist Brent Smith has returned to paint his signature murals across the venue, maintaining the distinctive Motel Mexicola aesthetic that diners have come to know.
A striking 21-metre bell tower serves as the architectural centrepiece, housing two separate bars and anchoring the overall design. The sprawling layout includes custom-made equipales seating imported from Mexico, intimate kissing booths for couples, an open taqueria and asador, a live music stage and DJ booth. This thoughtful arrangement allows the atmosphere to transition naturally from relaxed afternoon dining to energetic evening entertainment.
The culinary programme centres on Mexico's coastal traditions under Culinary Director Manuel Santos and Head Chef Manuel Bernal. House-made tortillas form the foundation of the menu, filled with preparations ranging from beer-battered mahi mahi and lamb barbacoa to slow-cooked beef cheek and braised pork ribs. Fresh seafood takes prominence through dishes such as prawn aguachile, tuna and scallop tiradito, and smoked tuna empanadas.
A custom-built three-metre asador anchors the kitchen operations, producing whole grilled snapper, Baja-style lobster, Australian flank steak and achiote-marinated chicken cooked over rambutan and coffee wood. This approach brings authentic smoky depth and showcases the outdoor cooking traditions of northern Mexico. The focus on open-fire cooking methods creates both visual theatre and exceptional flavour in every dish.
Group Beverage Director Denny Bakiev has expanded the drinks programme to reflect Mexico's diverse spirits and regional flavours. The signature margarita selection remains central to the offering, complemented by modern cocktail interpretations that explore lesser-known Mexican ingredients and techniques. The bar programme aims to educate and delight visitors exploring Mexican mixology beyond the classics.
With its combination of architectural ambition, curated design elements and serious culinary execution, Motel Mexicola Uluwatu establishes itself as a major dining destination for Bali's growing community of visitors seeking authentic Mexican experiences. The venue opens this July.
