The restaurant has unveiled its reimagined Borderless menu, crafted by newly appointed Chef de Cuisine Made Sutarga, known professionally as Chef Ega. This evolution marks a significant moment for the Seminyak establishment, blending local Balinese ingredients with sophisticated international cooking methods.
Chef Ega brings nearly two decades of culinary expertise to the SugarSand kitchen, having worked at acclaimed establishments across Singapore, Florida, and Australia. His distinctive approach emphasizes sustainable practices and ingredient preservation, utilizing techniques such as house-made garum, fermented verjuice, and artisanal pickling.
